We love it when readers post on our Facebook wall of things they have tried on Pinterest or are thinking of trying. Todays Pin-Test came straight from a reader who found a pin that claimed you can make bread with two simple ingredients: ice cream and self-rising flour! Immediately I became super excited and had to try this Ice Cream Bread!
Honestly, I expected this test to fail. It seemed ridiculous and I just couldn’t fathom it. So, I was super surprised and equally happy to see that it really worked!!
Ice Cream Bread Recipe
This Sweet Ice Cream Bread Recipe is so simple!
To make Ice Cream Bread you need:
- 2 cups of Ice Cream- softened (any flavor)
- 1 1/2 cups of self rising flour.
Combine ingredients in a medium mixing bowl. Stir just until they are fully mixed together.
Put into a greased bread pan. Flatten with spoon.
Bake for 45 minutes at 350 degrees.
The ice cream bread does not rise much, it is a dense bread but it is yummy!!! Its not too sweet and honestly would be great with soup beans. Apparently you can use any flavor of ice cream you want. For this test, I used vanilla but now I can brainstorm the unlimited possibilities of flavoring this bread.
Immediately I think how great butter pecan ice cream would be, chocolate with a nutella topping, strawberry with a scoop of ice cream just after it comes out of the oven….there are endless combinations and ideas!
The Secret Behind the Recipe
Apparently this works so well because all of the basic ingredients for bread including sugar, eggs etc. are in ice cream. This saves you a lot of time and effort!
Problems with the Recipe
There is one problem with this ice cream bread recipe. The original post shows a thick bread. However, my bread did not rise and therefore was only about 2 inches tall. Maybe its the brand of self-rising flour I used or maybe I still need to add another basic ingredient- Baking Powder. It’s worth a try as I am confident I will be whipping up more ice cream bread batches in my future.
