Cassie and I are always looking for a budget friendly way to feed all of our kids when we get together. Between the two of us we have five children and it can be hard to find something inexpensive and something everyone will eat. When we saw the Pin for these Mini Corn Dog muffins we knew it was perfect! We put it to the PinTriedit Test and it was even kid approved!
Ingredients:
- Jiffy Corn Muffin Mix
- 1 Egg
- 1/3 cup of Milk
- 4 Hot Dogs
- Tbsp of Honey (optional)
If you prefer a different brand of corn muffin mix, just follow the directions on the box.
Step 1
Preheat over to 400 degrees and grease mini muffin pans or use liners
Step 2
Mix Egg, Milk and Honey into the Muffin Mix and let sit a few minutes
Step 3
Cut up the Hot Dogs
(we recommend first cutting in half length-wise and then slice them about a half an inch in size)
Step 4
Place about a half teaspoon of batter into muffin pan
Step 5
Place a Hot Dog and then Cover with JUST ENOUGH batter to cover the Hot Dog.
Step 6
Place into oven and bake until golden brown (took us about 10 minutes)
Step 7
Cool slightly to make corn dog removal easier.
Serve with your favorite side dish and enjoy!
